While I was at Walmart I picked up some PAM, MANWICH, Hunt’s Sauce, and other ingredients. Just add some veggies on the side and you’ve got an easy to make and complete meal!

Tip: I love PAM nonstick spray. It makes cooking and baking so much easier. You don’t have to worry about things sticking.

Sloppy Joe Pizza Sliders

Ingredients:

PAM

1 lb ground italian sweet sausage

3/4 C. Hunt’s Sauce

1 15oz can MANWICH Original Sloppy Joe Sauce

1 tsp. garlic powder

1 tsp. dried basil

1/2 tsp. salt

1/2 tsp. ground pepper

Slider Buns

Shredded Mozzarella

Pepperoni

Black Olives

Mushrooms

Directions:

Heat pan over medium heat and spray pan with PAM nonstick spray.

Cook the ground sausage until no longer pink. *Tip: If it comes out too “chunky” and you want smaller crumbles, use a metal potato masher while cooking. It breaks up the meat perfectly.

Drain to get rid of excess oil and put back in the pan.

Add salt, pepper, garlic powder and basil. Mix until combined.

Add MANWICH and Hunt’s Sauce. Stir and lower heat and simmer for 5 minutes. All done!

Assemble your sliders:

Get a slider bun and add Sloppy Joe Mixture.

Top with mozzarella, pepperoni, black olives and mushrooms.

You can either make a plate of these, or put everything on the table and let everyone create their own. Since some family members don’t like mushrooms and others don’t like black olives, that’s what we did. And, it was fun! This recipe is very versatile. You can use your favorite toppings!

 The perfect summer sandwich: cold, fresh, and easy.

How about this. Fresh mozzarella combined with juicy tomatoes and aromatic basil layered between a good ciabatta bread. Take it to the next level with the addition of garlic powder, salt, pepper and a little drizzle of extra virgin olive oil. YUM!

Tomato, Mozzarella & Basil Sandwich

Ingredients
  • Loaf of ciabatta bread
  • fresh mozzarella
  • tomatoes
  • basil
  • OPTIONAL:
  • olive oil
  • salt
  • pepper
  • garlic powder
Instructions
  1. The ingredients aren't exact, as you will use it to fit the size of the bread you have and the amount you want to add!
  2. Layer the tomatoes, mozzarella, and basil on the bread. Drizzle with EVOO and season with garlic powder, salt and pepper.

 

 This tomato, mozzarella and basil sandwich can be eaten as-is or you can even make it a gourmet.  Cook it on the stove just like a regular grilled cheese, use a panini press, or put it on the grill. It’s a simple, yet versatile Italian-inspired sandwich.

It was a cold and frosty day. I wanted something filling, but not too heavy. Not sure what I was in the mood for, I headed for the pantry. A can of black beans stared at me…hmm. Soup! Yes, creamy black bean soup! So I grabbed this and that and went to the stove to create my black bean soup from scratch.

It was so simple and easy to make. I had everything I needed right in my kitchen. I’m trying to be more mindful about what I eat. So, I used low-sodium black beans to make it even more healthy.

This soup doesn’t have too many ingredients. Besides the beans, there’s vegetable broth and onions. Fresh cilantro tied it all together. Yum. A great vegetarian and vegan soup.

This protein-packed soup would go well with a nice crusty piece of bread and a salad.

Quick and Easy Black Bean Soup

Ingredients
  • 3 15oz cans of black beans, drained and rinsed
  • 1-2 tsp olive oil
  • 20oz Vegetable Broth
  • 1 small onion, diced
  • garlic powder
  • salt and pepper, to taste
  • 3-5 fresh cilantro leaves, optional
Instructions
  1. in a pot, saute onion over medium heat until they start to turn translucent
  2. add remaining ingredients and simmer for 5 minutes, until heated through.
  3. Let cool a little and use hand/emersion blender to make a nice smooth soup.

This bean salad recipe is super simple, hence the name Super Easy Bean Salad!

There is no cooking required. You can change up the beans or vinegar with what you have on hand to make it your own! I usually use cut green beans, but I didn’t have any. So, I used the french style and it actually added a little something different with the variety of bean sizes.

I am a vegetarian living with carnivores, so I have to sometimes come up with food that is nutritious for everyone. Beans are a great source of protein.

I love this recipe because, not only is it inexpensive, it tastes delicious.

Super Easy Bean Salad

Ingredients
  • 1 15oz can red kidney beans
  • 1 15oz can cannellini beans
  • 1 15oz can french style green beans
  • ¼ chopped red onion
  • ⅛-1/4 tsp of garlic powder
  • ½ cup olive oil
  • ¼ cup white balsamic vinegar
  • salt and pepper to taste
Instructions
  1. Drain and rinse all of the beans
  2. in a large bowl, mix all of the ingredients
  3. serve right away, or put in the fridge to enjoy it cold

Tri-Color Quinoa Salad

Tri-Color Quinoa Salad

Ingredients
  • 1 Cup dry Tri-Color Quinoa (follow directions on package, Mine was 1 Cup Quinoa to 2 Cups of Water. Bring to a boil, lower heat, cover and simmer for 15 minutes)
  • 1 Cup Chick Peas, canned
  • ½ Cup Corn, no-salt canned
  • 1 Medium tomato, diced
  • 2tbs Olive Oil
  • 2tbs White Balsamic Vinegar (Red Wine Vinegar would work, too)
  • ¼ tsp Garlic Powder
  • Salt and Pepper to taste
  • Few leaves of Fresh Basil, chopped and some for garnish
Instructions
  1. Cook quinoa according to directions. Mix all ingredients together in a bowl.
  2. This can be served warm or cold.
